Miguel Sánchez Romera is definitely a unique chef in the world of gastronomy.
His background as a neurologist has brought a very personal, authentic and original touch to his work as a Chef.
He approaches cooking from three angles: scientific, health-based and artistic. The Chef believes that bringing together those three elements is his true mission within the culinary world. He always takes creativity to extremes. His only limit is that the food stays natural and healthy, while his primary motivation is the utmost pleasure the diner experiences with the food. This has been his main approach to work for the last 20 years.
Miguel sees the diners in the same way he sees his patients – “health and well-being are the main objectives and must remain intact throughout our existence.”

The current Sánchez Romera style is the culmination of the chef’s culinary career.
The Chef’s first culinary experiments started in his home kitchen. Finally, he became a self-taught chef. Later, as a highly-demanded professional, he gained a lot of expertise working in top restaurants in Barcelona, Tokyo, Yokohama, New York, Caracas, Beijing, Shandong…
That finally built his new culinary identity.
His current professional status and vast multicultural experience allow him to express his culinary ideas with unlimited and unconditional freedom.
Chef Sánchez Romera´s concept is based on preserving the qualities of the local products highlighting the flavours and aromas that reflect their true essence. His final objective is to offer the guests a unique sensation of travelling through our land using the gastronomic tools and feel all the contrasts and nuances that characterize “our sea, garden and mountains”.
